Indian

Indian food is my passion. I love cooking and teaching Indian dishes. Using spices in different ways to build up the layers of flavour in a dish, from slow-cooked meat dishes to the vast range of pulses and vegetarian dishes, regal rice dishes and home-made breads and chutneys. I take my inspiration from Indian chefs all the way from the traditions of Madhur Jaffrey to the modern fusion style of Vivek Singh.

I have a wide range of Indian dishes I can offer. A few examples are shown below.

Tamarind Seared Tuna

Main Courses



Lamb (or Beef) Rogan Josh
traditional slow-cooked dish with many layers of spices, and paprika

Calves Liver with Masala Mashed Potato
the liver is fried in a spiced batter, making it incredibly tender - this dish is heaven. Served with stir-fried vegetables and mango coulis

Spinach and Apricot Chicken Korma
not your average korma: chicken breast rubbed with cardamom and mace, stuffed with spinach, cooked in a ballotine, and served with a cashew sauce

Delhi Butter Chicken
Marinated chicken thighs, cooked with a rich Chilli and Tomato sauce, finished with Cream and a Butter glaze

Kerala Seafood Curry
fish and shellfish cooked with coconut milk, curry leaves, tamarind, tomato and a little chilli

Salmon or Prawn Biryani
layers of spices built into an aromatic curry which unusually features Thai shrimp paste

 Hyderabadi Layered Biryani (V)
a rich rice biryani layered with potato, aubergine, cauliflower and fried onions, finished with coriander and mint


Sweet Potato and Cauliflower Curry (V)
sweet potato, cauliflower, onion, peas and carrot cooked with almonds, coconut milk, sultanas, finished with desiccated cocunut, coriander leaves and lemon juice

Pickled Aubergine in Tomato Sauce (V)
charred aubergine pieces in a rich tomato sauce with fennel seeds

Saag Aloo Dhal, with Carrot and Dill (V)
lentils, potato, tomatoes, aubergine and carrot with spices, chilli and turmeric, finished with dill leaves

Butternut Squash in Tamarind Masala
with dates and raisins - sweet and sour flavours, almost a chutney


Naan Breads (V)
home made, plain, garlic or peshwari - I make all naans myself and they are (in my opinion) superior to anything you have tasted in a restaurant
